I have zero experience in resin and what all the different kinds there are and what they all mean. I'm wanting to make a table and the table top will be an old door. I'm wanting to fill it with resin to make it a smooth and preferably shiny top. What am I needing to
Do/buy etc? Or is it too hard for a beginner? Thanks.

You probably want an epoxy resin. Check out Youtube videos of resin-encapsulation tabletops. Not an easy first project, but not too hard, I don't think.
